you take the map of the output connector pinout, put it next to the PSU's modular connector pinout, plan out where your wiring will go, and start wiring things up. you go to some parts supplier like digi-key, and order the connectors for the mac side, and the connectors for the PSU side. you buy a modular ATX power supply, and take note of which connectors it uses.

in case you need to do translation for certain control lines (for example if PS_ON or PWR_OK signals are handled differently) you have to figure out how to implement those. you trace back which connectors they are, and given that 2000s apple wasnt as horrid as things are today they're a standard format you can still order today you create a map of the output connectors you need, and their pinout (which pins are +12v, which are ground, certain control pins, etc.) I've recently done the exact same thing for an AT power supply that was needing quite urgent replacement.
if they dont have the same rails, or they cannot be derived easily (like a 0.1A -12v rail for some ISA slot cards) it's a nightmare Given that they have the same voltage rails.
